  • 1½ cupswhite whole wheat flour
  • 1/2 cupregular oats
  • 1 teaspoonbaking powder
  • ½ teaspoonbaking soda
  • ½ teaspoonsalt
  • 2 teaspoonground cinnamon
  • ½ teaspoonground nutmeg
  • ½ cupraw honey
  • ½ cupunsweetened applesauce
  • ⅓ cupcoconut oil, melted
  • 1
  • 2 teaspoonsvanilla extract
  • 1¼ cupgrated zucchini (aboutzucchinis)
  • 1/3 cupmini chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare a muffin tin by adding in cupcake liners.
  3. In a medium bowl, add flour, regular oats, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Whisk together.
  4. In a large bowl, add honey, unsweetened applesauce, coconut oil, egg, and vanilla extract. Whisk together until smooth.
  5. Slowly add the dry ingredients to the wet ingredients until everything is combined.
  6. Fold in the zucchini and chocolate chip.
  7. Add the batter to muffin tins, fill 3/4 of the way up.
  8. Bake for 25-27 minutes, or until a toothpick comes out clean.
  9. Serve.
