Sesame Lime Chicken Kebabs:
- 1lb boneless chicken breasts, cut into1” cubes
- 2汤匙fresh lime juice
- 2汤匙烤芝麻油
- salt & pepper
Spicy Peanut Sauce:
- 1/4 cup+1 tablespooncreamy peanut butter
- 1 tablespoonlow sodium soy sauce (or tamari for glutenfree)
- 1 teaspoonrice vinegar
- 1 teaspoongrated ginger {or1/2 teaspoonof ground ginger}
- 1garlic clove, minced
- 1/2 teaspoonred pepper flakes
- 1/4 cupwater
- 1 tablespoonfresh lime juice
- green onions, sliced {for garnish}
Instructions
- In a large bowl, mix sesame oil, lime juice, salt, & pepper.
- Add cubed chicken to marinade mixture, toss to coat chicken.
- Cover and marinate in refrigerator for 20 minutes.
- In the meantime, in a small bowl mix together peanut butter, soy sauce, rice vinegar, grated ginger, garlic clove, red pepper flakes, water, and fresh lime juice. Whisk together until smooth and set aside.
- Place chicken cubes on skewers.
- Heat grill to medium high heat or 400 degrees..
- Grill each side for 3-4 minutes.
- Serve with spicy peanut sauce.
