Description
泰国鸡花生面条is a light and easy Thai dish with a spicy, creamy peanut sauce. It’s tossed with crunchy veggies, pasta and chicken!

Ingredients
- 1lb. of whole wheat spaghetti
- 1 cupof cooked chicken, chopped
- 1red pepper, julienned
- 1/2 cupof green onions, sliced
Sauce:
- 4 Tablespoonsof peanut butter, reduced fat natural
- 6 Tablespoonsof fresh lime juice
- 3 Tablespoonsof low sodium soy sauce
- 2 Tablespoonsof brown sugar
- 1/4 cupof basil, chopped
- 1/4 cupof cilantro, chopped
- 1/2 teaspoonof ground ginger
- 1/4 teaspoonof red pepper flakes
- sesame seeds for garnish
Instructions
- In a small bowl, mix together reduced fat peanut butter, fresh lime juice, low sodium soy sauce, brown sugar, chopped fresh cilantro, chopped fresh basil, ground ginger, and red pepper flakes. Whisk until smooth.
- Bring a large stockpot of water to a boil, throw whole wheat spaghetti in water and cook until al dente. {about 8-10 minutes}
- Drain water and toss in cooked chicken, red pepper, green onions, and peanut sauce with pasta. Toss to coat. Garnish with sesame seeds.
