Ingredients
- 8strips of turkey bacon, thinly sliced
- 1T. of coconut oil
- 1 1/2 cupof fresh spinach
- 1/4 cupchives, chopped
- 3 oz. goat cheese, crumbled
- 8eggs
- 1/2 cupof 2% milk
Instructions
- Heat medium sized oven safe skillet to medium high heat.
- Slice turkey bacon into thin strips.
- Add cocount oil and turkey bacon slices to pan. Saute until crispy.
- Then add fresh spinach.
- Saute until cooked down.
- In a separate bowl, whisk eggs and milk.
- Add milk mixture to turkey pan.
