Ingredients
For the Roasted Grapes
- 1 cupred grapes
- 1 tablespoonolive oil
- salt to season
For the Lemon Vinaigrette
- 2 tablespoonsfresh lemon juice
- 2 tablespoonsolive oil
- 1 tablespoonhoney
- 2 tablespoondijon mustard
- 1garlic clove
- 1 teaspoonfresh thyme
- salt & pepper to taste
For the Arugula Salad
- 4 cupsarugula
- 1granny smith apple, thinly sliced
- 1/3 cupcandied pecans
- 1/4 cupshaved parmigiano reggiano
Instructions
Roast the Grapes
- Heat oven to 400°F.
- Spread grapes on a parchment paper lined baking sheet. Drizzle with olive oil and season with salt.
- Roast for 20 minutes. Remove and let cool.
Make the Dressing
- To a small bowl add lemon juice, olive oil, honey, mustard, garlic, thyme, salt and pepper. Whisk until well combined.
- Set aside.
Assemble the Salad
- To a large bowl add arugula, apple, candied pecans, Parmigiano Reggiano and roasted grapes.
- Drizzle with dressing and gently toss or serve the dressing on the side.
