Description

ThisSausage, Pepper & Onion Frittatais the perfect healthy breakfast or brunch to make for your family! Plus, it’s a great way to use up those leftover ingredients from pizza night!


Ingredients

  • 8eggs
  • 1/2 cupmilk
  • 1 Tablespoonof coconut oil
  • 1/2 cupof cooked pork sausage {Jimmy Deans}
  • 1/4 cupof red pepper, julienned
  • 1/4 cupof red onion, julienned
  • 4 oz. goat cheese
  • chopped scallions {optional}
  • 1/4 teaspoonof dry basil {optional}

Instructions

  1. Mix eggs and milk in a large bowl. Set aside.
  2. Preheat oven to 350º.
  3. Heat a large skillet to medium high heat. Add coconut oil, red peppers, and red onion to skillet.
  4. Saute for 3-4 minutes until onions are translucent.
  5. Next add cooked pork sausage to pan {i used Jimmy Deans}
  6. Saute in skillet for another 3-4 minutes.
  7. 锅里加入鸡蛋混合物,搅拌一次,成分let sit for 4 minutes.
  8. While frittata is sitting on the stove. Evenly crumble goat cheese over frittata.
  9. Place frittata in oven for 10-12 minutes or until frittata has set. {if you shake the pan the eggs do not jiggle}
  10. Remove from the oven and slide out of pan on cutting board or serving platter.
  11. Top with freshly chopped scallions or sprinkle with 1/4 teaspoon of dry basil. {optional}
