Ingredients

  • 2 cupsof white whole wheat flour
  • ½ cupof natural cane sugar
  • ½ teaspoonof baking soda
  • 1½ tablespoonsof poppyseed
  • 1 teaspoonof chia seed
  • ¾ cupof coconut oil, melted
  • 1 cupof vanilla greek yogurt
  • 1 tablespoonof vanilla extract
  • ¼ teaspoonof salt
  • 2eggs
  • 1 teaspoonof lemon zest
  • 4 tablespoonsof lemon juice

Instructions

  1. Preheat oven to 375º.
  2. Grease a loaf pan with coconut oil.
  3. In a large bowl mix, white whole wheat flour, natural cane sugar, baking soda, lemon zest, salt, poppyseeds, and chia seeds. Whisk together.
  4. In a small bowl mix melted coconut oil, vanilla greek yogurt, vanilla extract, fresh lemon juice, and eggs. Whisk together.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Add batter to prepared loaf pan.
  7. Bake for 40 minutes or until toothpick comes out clean.
