Ingredients
- 2 cupsof white whole wheat flour
- ½ cupof natural cane sugar
- ½ teaspoonof baking soda
- 1½ tablespoonsof poppyseed
- 1 teaspoonof chia seed
- ¾ cupof coconut oil, melted
- 1 cupof vanilla greek yogurt
- 1 tablespoonof vanilla extract
- ¼ teaspoonof salt
- 2eggs
- 1 teaspoonof lemon zest
- 4 tablespoonsof lemon juice
Instructions
- Preheat oven to 375º.
- Grease a loaf pan with coconut oil.
- In a large bowl mix, white whole wheat flour, natural cane sugar, baking soda, lemon zest, salt, poppyseeds, and chia seeds. Whisk together.
- In a small bowl mix melted coconut oil, vanilla greek yogurt, vanilla extract, fresh lemon juice, and eggs. Whisk together.
- Add wet ingredients to dry ingredients and mix until just combined.
- Add batter to prepared loaf pan.
- Bake for 40 minutes or until toothpick comes out clean.
